Belly is good for so much more than just bacon!

On August 21st Chad Lebo with Cure Cooking out of Fort Calhoun will be at Helping U Barbeque to teach his Beyond Bacon Belly Class!

Class will cover 3 distinct recipes and techniques from around the globe that utilize grilling and/or smoking. Several varieties of belly will be used as well. Chinese red braised belly will start with skin-on Duroc pork belly. We will see 2 versions of Italian porchetta: 1 using skin-on Duroc pork belly as well and a skinless one using Berkshire pork belly stuffed with tenderloin. And finally, there will be grilled Argentinean beef belly made from local Piedmontese beef.

There will be samples to enjoy of each recipe and each student will season and tie a small porchetta and get a piece of beef belly to practice at home.

Recipes provided, but note taking highly encouraged.
