On November 4th Chad Lebo with Cure Cooking out of Fort Calhoun will be at Helping U Barbeque to teach his DIY Dry Cured Ham Class!

Skip buying a ham this holiday season and make one yourself instead!

During this class Chad will teach the science, math, and techniques of basic dry-curing and brining from scratch (no pre-mixed cures and rubs). There will be a butchering demonstration of breaking down a whole bone-in Berkshire pork back leg. Then using boneless Duroc pork legs, everyone  in the class will dry-cure and net a small ham. Each student will also start brining a small “ham” using Duroc pork loin. He will cover traditional seasonings,  how to finish the curing at home, as well as various methods for smoking and cooking. We will carve and sample 2 different hams right out of the smoker.

Recipes provided, but note taking highly encouraged.
