Hallo-Wing Cookoff | October 31st, 2020
We're thrilled to host the Hallo-Wing Cookoff BBQ Competition with Smokin' Lefty's BBQ! Proceeds from this event will benefit Together, a wonderful non-profit focused on assisting the homeless in our community.
 
RULES AND REGULATIONS
1. COOK-OFF WING CATEGORIES
(All wings must contain the bone at turn in)Traditional Wings (Buffalo Style, Hot or BBQ)
Dry Rub (No Sauce) Contemporary (Anything goes)
2. INGREDIENTS & PREPARATION
There is no limit to the number of members on each team. In order to ensure the wings are all the same, wings will be provided for the event. Wings will be given out at the cooks meeting at 10:00 am. Each team will be given 10 wings for each category. Everything must be cooked on-site during the hours of the contest except sauce. Contestants may use previously prepared or commercial sauce. Any seasoning or ingredient necessary to create unique taste is acceptable. Every chicken wing must be cooked to an internal temperature of 165 degrees Fahrenheit.
3. COOKING
Each team is expected to maintain clean and sanitary conditions and to keep wings chilled and fresh before cooking and hot after cooking. Contestants must bring all necessary supplies and
cooking equipment. Wings may be prepared with wood, charcoal, propane, or electric. Wings can be cooked using any of the following cooking methods (deep fried, grilled, smoked or any
method the contestant feels suitable to complete their entry).
Contestants may erect a canopy or tent. Contestants will be provided with a 10’x10’ cooking space. No power will be provided. Generators are permitted and is the responsibility of the
contestant (all generators must be below 70 decibels). Water will be available inside Helping U BBQ. Water will not be available during judging. Contestants will be expected to have a fire
extinguisher on hand.
4. JUDGING
Contestants must turn in a minimum of 5 pieces for judging. Turn in box can contain drummies, flats or combination of both. The following are the turn-in times for judging of each category. No
late turn-ins will be accepted.
Traditional Wings 1:00 pm -1:15 pm
Dry Rub Wings 2:00 pm – 2:15 pm
Contemporary Wings 3:00 pm – 3:15 pm
The winner will be selected by a panel of 5 judges. Judging will be based on Execution. Appearance, Taste (all wings must be fully cooked). Each team will submit 5 wings to the judges
in a marked Styrofoam container, which will be provided by Helping U BBQ. Wings can be either drummies, flats or a combination of both. Garnish is optional and will not be judged as part of appearance. No alcohol permitted in box as a garnish.
Each container will be then be passed around the table, and each judge will take a sample wing from each of the numbered containers.
The scoring system is from 1 to 5 for each category. The scoring scale is: 5 - Excellent, 4 - Above Average, 3 – Average, 2 - Below Average, 1 - Very Poor
The weighting factors for the point system are: Execution -35%, Appearance -15%, Taste -50%.
Execution is described as: Does the wings meet the criteria of the specific category? Appearance is described as: Is it pleasing to the eye? Does it look appetizing? Taste is described as: Is it pleasing to the taste buds? Does it make you want to eat more? Is there an appropriate balance of flavor? Only judges and Helping U BBQ representatives are allowed in the judging area during the
Judging process. No other activities are permitted in the judging area during judging process. The team with the highest total score will be the winner. In the event of a tie, the judges will
each vote for the winner from among the two Contestants with the highest score.
5. PRIZES
Based on a minimum of 12 contestants and will increase with more contestants.
Prize money for each category:
$25 - 3rd place
$50 – 2nd place
$80 – 1st place
Prize money and Trophies for Overall Grand Championship and Reserve Grand Championship. Must cook all 3 categories to be eligible for Reserve & Grand Championships.
$75 – Reserve Grand Champion
$150 – Grand Champion
Awards will be held at approximately 4:30 depending on when judging and results are completed.
6. REGISTRATION
Registration fee is $80 for all 3 categories. Register by contacting Helping U BBQ at orders@helpingubbq.com or call 402-932-4578. Payment must be in the form of cash or check and must be paid prior to the day of the cookoff. Cooks must check in with Helping U BBQ representatives for their area assignment upon arrival. At that time, we will provide you with any new or additional information concerning the cook-off.
7. COOKING SPACE SET-UP and TEARDOWN
Cooking spaces will be approximately 10'x10'. It is strongly recommended each team have a 10' x 10' tent for the day of the event. Set-up can begin at 8:00am on October 31st. No trailers will
be permitted. Areas must be cleaned up at the end of the event. All equipment must be off the premises by 6:00 PM. The Helping U BBQ would appreciate your help in keeping the event site
beautiful. Please clean up any trash that is within your space and deliver all garbage to the available collection area. Ashes/coals shall be disposed of in the metal cans provided on site.
EACH PARTICIPANT IS RESPONSIBLE FOR THEIR GREASE DISPOSAL. NO GREASE WILL BE ALLOWED IN TRASH CANS OR DUMPSTERS.
