Corned beef and Bacon Class

Corned Beef & Bacon may not pop out as a natural combination, but they are both cured meats. And whether dry-cured or wet-cured (brined) they use the same techniques. Chad Lebo of Cure out of Fort Calhoun is back to teach this class in time for you to make your own Corned Beef for Saint Patty’s day or get a head start on BLT season. Class will cover the math and science of curing, spices and cooking/smoking methods, and which cuts of meat for are possible for both. And since Pastrami is essentially just smoked corned beef, class will include that as well.
