On December 4th Chad Lebo from Cure will be back at Helping U Barbeque to teach his Ham Curing 101 Class.
Skip buying a ham this holiday season and make one yourself instead. Class will cover the science, math and techniques of basic dry-curing & brining from scratch (no pre-mixed cures and rubs). Various styles of traditional hams will be presented including classic dry-cured ham made from the back leg, 2 styles of shoulder ham, and even beef ham. Will talk about both classic and some creative seasonings as well as cold-smoking vs hot smoking hams. Each student will leave with a mix of Basic Cure to go home and make their own ham in time for Christmas. Samples of several hams will be savored right out of the smoker. Recipes provided, but note-taking also highly encouraged.
