On October 30th Chad Lebo from Cure will be back at Helping U Barbeque to teach his Bacon Curing Class 101.
In this class you will learn the science, math and techniques of both dry-curing and brining your own bacon. This demo class will cover standard bacon made from pork belly, but also show back bacon (loin) and cottage bacon (shoulder). Students will leave with recipes covering all the curing and smoking techniques and enough cure and a piece of belly to go home practice. Samples provided during class.
